In 2018, Tamarack Camps announced the addition of the much-awaited Farber Farm.
The farm produces food during all four seasons of the year using outdoor field growing methods, as well as indoor growing in the hoop house and greenhouse. No matter the time of year, visitors will always find something delicious to sample at the farm. From frost-sweetened kale in the winter to vine-ripened heirloom tomatoes in the summer.
In the spring, the greenhouse keeps seedlings to be planted once the weather warms, while the hoop house is bursting with tender spring greens. During the summer, the fields are glowing with brilliantly colored flowers, sweet aromatic herbs, and a bounty of diverse fruits and vegetables such as peppers, tomatoes, beans, corn, melons, and zucchini. In the fall, there is a bounty of winter squash, roots crops, and “cold-crops” such as broccoli, cabbage, and cauliflower. Alex, the beloved Farm Manager, points out that as the days shorten, people begin to hunker down and reflect indoors; similarly, many of the crops of this time are root plants that pull down into the Earth in the same way people ground into place as they await the cold season.
Summer on the farm is the busiest time. Campers learn to explore and tend the garden, dig into their Jewish roots, and gain a deeper understanding of the cycles of life and growth in the natural world. Almost everything harvest in the summer is consumed at Camp Maas. The Jewish people were the first shepherds of the land. And here, at the Farber Farm, everyone finds themselves inspired to be connected back to their roots.
